Tuna Noodle Casserole

 Cooking spray
 8 oz. egg noodles, uncooked
 1 tbsp cooking oil
 1 onion, diced
 2 celery stalks, diced
 2 carrots, diced
 1 cup peas
 2 5-oz. cans tuna, drained
 1 10-oz. can cream of mushroom soup
 ⅓ cup milk
 1 cup cheddar cheese, shredded
 ¼ cup breadcrumbs

1. Preheat oven to 400 degrees Fahrenheit.

2. Prepare noodles according to package instructions. Drain and set aside.

3. Heat oil in a large pot over medium heat. Add onion, carrots, and celery, and sauté until softened, about 5-6 minutes. Remove from heat.

4. Add noodles, peas, tuna, mushroom soup, milk, and cheese to the pot and stir until combined.

5. Pour mixture into greased 13x9-inch baking dish. Sprinkle with breadcrumbs. Bake for 20-25 minutes.
