1 tbsp cooking oil
½ onion, chopped
½ bell pepper, chopped
2 to 3 celery stalks, chopped
2 15-oz. cans vegetarian baked beans
1 14.5-oz. can diced tomatoes, drained
1 tbsp brown sugar
1 tsp mustard
1 tbsp ketchup
1. Heat oil in a large saucepan over medium heat.
2. Add onion, bell pepper, and celery and sauté for 5-7 minutes, or until vegetables are tender.
3. Stir in baked beans, diced tomatoes, brown sugar, mustard, and ketchup. Bring mixture to a boil.
4. Reduce heat to low and simmer, uncovered, for 10-15 minutes, stirring occasionally.
5. Serve warm.
