2 mangoes, peeled and diced
1 jalapeno, minced (remove seeds for mild spice)
1 bell pepper, diced
½ red onion, diced
¼ cup fresh cilantro, chopped
Juice of 1 lime (about 2 tbsp)
¼ tsp chili powder
Salt to taste
1. In a medium bowl, add all ingredients and stir to combine.
2. Refrigerate for at least 30 minutes.
3. Serve with tortilla chips or use as a topping for tacos, grilled meat, or fish.
