Lebanese-Inspired Mujadara

 2 tbsp cooking oil, divided
 ½ tsp ground cumin
 ¼ tsp cinnamon
 ¾ cup lentils, uncooked, rinsed
 3 cups vegetable broth
 ½ cup white rice, uncooked
 1 onion, thinly sliced
 Salt and pepper, to taste

1. Heat 1 tbsp oil in a large pot over medium heat. Add cumin and cinnamon and stir for 1-2 minutes.
2. Add lentils and broth to the pot and stir. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 15 minutes.
3. Add rice to the pot and stir. Re-cover and simmer for another 15-20 minutes, until the lentils and rice are tender.
4. While the rice cooks, add the remaining 1 tbsp oil to a small saucepan and heat over medium. Add the onions, salt, and black pepper.
5. Sauté for about 15 minutes, stirring occasionally, until onions are starting to brown and crisp on the edges.
6. Serve lentils and rice warm, topped with onions.
