¼ cup pinto beans, cooked
¼ tsp garlic powder
¼ tsp chili powder
1 tsp cooking oil
2 eggs
1 to 2 corn tortillas
2 tbsp salsa
2 tbsp Cotija cheese
Lime wedges, optional
1. In a small bowl, use a fork to mash pinto beans with garlic powder and chili powder. Set aside.
2. Heat oil in a medium skillet over medium heat. Crack two eggs into skillet and fry as desired. Remove from heat.
3. Lay tortilla(s) on a plate. Top with beans and cheese. Heat in the microwave for 30 seconds.
4. Top with eggs, salsa, and cheese. Serve with lime wedges, if desired.
