1. Preheat oven to 425 degrees Fahrenheit.
2. Add bran flakes to a zip-top plastic bag and seal. Crush cereal with a rolling pin or can until it resembles a breadcrumb texture.
3. In a medium bowl, stir together cereal crumbs, parmesan cheese, black pepper, and parsley.
4. In another medium bowl, whisk together egg and milk until combined.
5. If your chicken breasts are large, cut them in half lengthwise so they are no more than 1-inch thick.
6. Dip a chicken breast into the egg mixture and coat on both sides, then repeat with the breadcrumb mixture.
7. Place chicken on a greased baking sheet. Repeat with remaining chicken, leaving 1-2 inches of space between them.
8. Spray the tops of the chicken with cooking spray.
9. Bake for about 20-25 minutes, or until a thermometer inserted into the thickest part of the chicken reads 165 degrees Fahrenheit.
10. Serve warm.
