Chipotle Sweet Potato Salmon Bites

 Cooking spray
 1 15-oz. can salmon, drained
 2/3 cup sweet potato, mashed
 ¼ cup cheddar cheese, grated
 ¼ cup red onion, minced
 1 egg
 2 tsp dried parsley
 1 tsp Dijon mustard
 Juice of ½ lime, or about 1 tbsp
 ¼ tsp black pepper
 ¼ tsp chipotle chile powder
 ¼ tsp garlic powder

1. Preheat oven to 375 degrees Fahrenheit.
2. Spray a baking sheet with non-stick spray and set aside.
3. Add all remaining ingredients to a large bowl. Mix and mash with a fork or your hands until well combined.
4. Using your hands, form mixture into about 12 balls. Place balls on the baking sheet about 2 inches apart. Flatten each ball slightly with your hands or the back of a spoon.
5. Bake for 20-25 minutes.
6. Serve warm with creamy dipping sauce, such as guacamole or light ranch dressing.
