1 cup quick-cooking oats (certified gluten-free if needed)
½ cup unsweetened applesauce
¼ tsp cinnamon
1/3 cup raisins
Pinch of salt
Cooking spray
1. Preheat oven to 350 degrees Fahrenheit.
2. In a medium bowl, stir together all ingredients, except cooking spray, until combined.
3. Drop dough by rounded tablespoons onto a greased baking sheet, making about 8 small cookies. Leave 2 inches of space between cookies.
4. Flatten each cookie slightly with the back of a spoon.
5. Bake for 12-15 minutes. Allow cookies to cool on the sheet for 5 minutes before moving to a cooling rack with a spatula.
